Spaghetti Bolognese

Don’t be surprised if you ever hear Italians call spaghetti bolognese “ragù”. The thing is, this is what they call any meat sauce that is cooked on low heat for several hours. Indeed, cooking spaghetti bolognese (or pasta bolognese) originally required nearly half a day!  And they say that the oldest recipe for the sauce, created in the city of Bologna (hence the name), consisted of completely different ingredients: chicken liver, truffles, and cream. However, in today’s world, circumstances have changed. Firstly, bolognese sauce is made from meat and tomatoes, and secondly, no one stews the ingredients for several hours (at best, half an hour). By the way, we will disappoint those who like to look for the “most correct recipe”: in this case, it does not exist. Every Italian housewife adds ingredients to her Bolognese sauce to her taste (sweet and hot peppers, mushrooms, celery, or zucchini) and considers this option ideal. INGREDIENTS FOR 4 SERVINGS

onion – 1 pc.

garlic – 2 cloves

olive oil – 2 tbsp.

minced meat – 600 g

sweet pepper – 2 pcs.

canned tomatoes in their juice – 500 g

spaghetti – 250 g

grated hard cheese – 100 g

oregano, parsley, basil – to taste

salt, ground black pepper – to taste

COOKING RECIPE

Step 1

Prepare the sauce for spaghetti bolognese. To achieve this, remove the skin from the onion and garlic. Slice the onion in half, then chop it into small cubes. Smash the garlic cloves with the flat edge of a knife and mince.

Step 2

Verser de l’huile d’olive dans une grande poêle et la chauffer. Sauté the diced onion and garlic, stirring continuously, over medium heat until they become slightly browned.

Step 3

Add the minced meat to the onion and garlic and, stirring with a fork (to avoid lumps), fry in a frying pan over medium heat for 10 minutes. The meat foundation for the Bolognese sauce is prepared!

Step 4

Cut the bell pepper into small cubes, removing the seeds and partitions. Add to the frying pan with the meat and fry for 5 minutes, stirring. Make sure the pepper does not burn.

Step 5

Remove the skin from the tomatoes and put them in a blender container. Blend at a high speed, then incorporate into the skillet with the meat and vegetables. Add salt and pepper to taste. Incorporate herbs to your preference and cook the Bolognese sauce on low heat for 20 minutes

Step 6

Cook the spaghetti. To accomplish this, heat water in a large pot until it boils and stir in a pinch of salt. Put the spaghetti in there without snapping it. Place the spaghetti in it without breaking it. Do this gradually, as the part submerged in water softens. Cook for 10 minutes.

Step 7

Put the finished spaghetti in a colander and let the liquid drain. No need to rinse them: this way, the pasta will better combine with the sauce. But you can add a tablespoon of olive oil.

Step 8

Add the spaghetti to the Bolognese sauce and stir. Sauté all the components together in a frying pan. Then, serve on separate plates and add shredded cheese on top. Serve right away.

HELPFUL TIP

You don’t have to fry the bell pepper in the Bolognese recipe for spaghetti, but use it fresh. To do this, chop it finely, grind it in a blender together with canned tomatoes, and add to the sauce. Consequently, the flavor of the pepper will be more prominent

Spaghetti Bolognese is certainly not the only way to use this famous sauce. It is also used to layer, for example, lasagne of the same name, complemented with delicate béchamel.
